Breakfast is considered as one of the most important meal of the day, hence it is worth the effort to eat a healthy one!

Check out these few breakfast recipes that could inspire you to eat a good healthy breakfast, which is not only packed in with plenty of great flavours, but also contains good nutrition.

Beetroot Paratha

Mix whole wheat flour, salt, oil and water in a bowl to form a soft and smooth dough. In another bowl, add boiled and mashed beetroot, coriander powder, garam masala powder, turmeric powder, finely chopped green chillies, and salt to form a mixture.

Make medium sized balls from the dough and roll them out to add the beetroot mixture. Now pleat the edges and flatten the dough again to roll-out.

Cook the rolled-out parathas by adding a bit of ghee on each side.

Sabudana Khichdi

Soak sabudana for at least 45 minutes and drain the water. In a pan, heat the oil and add mustard and cumin. Allow it to splutter. Now sauté the green chilies and the curry leaves. Add diced, boiled potatoes, roasted peanuts to it, and cook for 3-4 minutes. And add sabudana with a pinch of salt and mix it all well. Cook till transparent.

Finally, add lemon juice and garnish the sabudana khichdi with coriander leaves.

Oats Upma

In a pan, dry roast the oats for few minutes. Heat oil and add mustard seeds, cumin seeds and dal. Allow them to splutter. Add chopped onions and till it gets light golden brown, sauté.

Now add veggies, green chillies, turmeric powder and garam masala along with chopped ginger in the pan. Cover and cook the veggies.

Now pour water into the pan and bring it to boil. Add oats and salt to it. Cover the pan with a lid, after mixing it well. Simmer till the oats are done. Garnish with some freshly chopped coriander leaves.

Egg White Omelette Rolls

Cook sliced onions, capsicum until soft. Now add blanched spinach and stir for another 2 to 3 minutes. Set it aside.

Now in another pan pour in the egg whites with salt and pepper. Cook until slightly set, for about 2 minutes. Flip the eggs and cook for another few minutes.

Now fill the egg whites with grated cheese and the onion, capsicum, spinach mixture and roll up the egg white omelette.

Peanut Butter Banana Smoothie

For preparing this smoothie, use frozen ripe bananas as they have plenty of natural sweetness.

Add these ripe bananas in a blender along with the peanut butter, milk, honey, and a pinch of salt. Blend until smooth. Since the texture of the blended bananas is a lot like an ice cream milkshake, you just need to top the smoothie with chopped peanuts.

Oats Uttapam

Uttapam is an Indian version of pancakes. For preparing oats uttapam grind oats and semolina and add yogurt, cumin seeds, salt, red chilli powder, ginger and water as required to make a thick batter.

Spread the batter like a dosa but not thin in the pan. Sprinkle a handful of chopped veggies and coriander leaves on top and cover with a lid for two minutes. Remove the lid, flip it to the other side to cook until golden brown.

Ragi Vegetable Dosa

In a bowl, add the ragi flours, semolina, grated vegetables, green chilies, cumin seeds, salt, curd and mix it with water to form a batter without lumps, though the batter shouldn’t be too watery. Now in a pan, add oil and spread the batter as you would do for a regular dosa and let it cook. Serve it with chutney.
