Christmas is just around the corner and it is time to wine and dine!

Be it a cozy Christmas celebration with friends or a traditional Christmas dinner with family there is always a reason to whip up a batch of cookies!

And if you are planning to spend a cozy day in baking, these easy to make festive holiday cookies are the ones to be tried out this Christmas.

Choco Chip Peanut Butter Cookies: Blend unsalted butter, peanut butter, and sugar well in a bowl using an electric mixer. Mix eggs and vanilla to it and continue to blend. Add flour, baking powder and salt to the mixture.

If the dough is too wet, simply mix in a little more flour, until the dough no longer sticks to the sides of the bowl. Transfer dough to a parchment paper and refrigerate the dough for 20 minutes.

Remove dough from fridge and roll out the dough with the help of cookie cutters of any desired shape and bake it until light brown. Immediately press chocolate chips in each cookie and bake it for another few seconds.

Chocolate Fudge Crinkle Cookies: Mix cocoa, caster sugar and oil together. And add eggs and vanilla extract to it. Whisk it until fully combined.

In a separate bowl, add the flour, baking powder and a pinch of salt together. Mix the cocoa mixture and blend until a soft dough is formed.

Note: the mixture should be more like a cake batter than a cookie dough. Transfer the dough to the fridge and chill for two hours or more, until firm enough to roll. And roll these balls in castor sugar and bake it until fluffy.

Almond Cookies: Ground almonds in a food processor and mix it with flour, baking powder and salt in a bowl.

In another bowl blend butter and sugar well. Add eggs and almond extract to it. Now add the flour mixture to the butter mixture until combined. Roll out the dough and place sliced almonds in each cookie and bake it.

Caramel Shortbread Cookies: Shortbread is basically a traditional Scottish biscuit usually made out from one-part white sugar, two parts butter, and three parts plain wheat flour. Even ingredients like ground rice or cornflour are added to alter the texture at times.

In a large bowl whip, the butter till it’s creamy. Then add in sugar and vanilla. Now add in the flour to make a dough. Then by using a round cookie cutter, cut the dough, bake the cookies and allow it to cool.

Meanwhile, add the unwrapped caramels in milk on high flame for 2-3 minutes by stirring every few seconds until the caramels are melted. Now add a small scoop of the caramel mixture at the centre of each cookies and garnish the cookies by sprinkling a bit of sugar over it.

Christmas Red-White Pinwheel Cookies:

Whisk flour, salt and baking powder together in a bowl. In another large bowl, blend butter, sugar and eggs well, and add vanilla extract to it. Combine the dry ingredients with the wet, to form a dough.

Now divide the dough in half and add red food colouring, to half of it. And roll out each dough in square shape before wrapping it to refrigerate, until firm.

Now place the red dough below the white and roll it tightly, to form a log. Roll the log on the counter a few times to seal the edges. Again, wrap it in plastic and refrigerate until firm.

Slice the cookies, roll the edges in sprinkles and bake it until edges starts turning golden and your ‘Christmas-themed cookies’ are ready!
